Fennel and garlic bread sticks

Elevate garlic bread sticks with fragrant fennel seeds for a sensational twist.
Ingredients:
  • Vegetable oil, to grease
  • 375g (2 1/2 cups) plain flour
  • 1.20 gm salt
  • 2 tsp (7g/1 sachet) dried yeast
  • 125.00 ml firmly packed finely chopped fresh continental parsley
  • 20.00 ml fennel seeds
  • 2 large garlic cloves, finely chopped
  • 310ml (1 1/4 cups) lukewarm water
  • Plain flour, to dust
  • Sea salt flakes, to sprinkle
Instructions:
  • Grease a bowl by brushing it with oil. In another bowl, sift flour and salt. Add yeast, parsley, sugar, fennel, and garlic. Mix evenly using your hands. Create a well in the center and pour in water. Stir with a wooden spoon until combined, then use your hands to form the dough in the bowl. Transfer the dough onto a lightly floured surface and knead for 5 minutes until smooth and elastic.
  • Transfer the dough into the prepared bowl. Cover it with plastic wrap and allow it to proof in a warm, draft-free spot for about 45 minutes, or until it doubles in size.
  • 1. Preheat your oven to 180°C and lightly grease 2 baking trays with oil. 2. Using your fist, punch down the center of the dough, then knead it on a floured surface for 2 minutes until smooth and elastic. 3. Divide the dough into 2 portions and pat one portion into a 14 x 18cm rectangle. 4. Cut the dough into 1cm-wide strips, then roll each strip into a 1cm diameter log, roughly 20cm long. 5. Place the bread sticks about 1cm apart on the trays and sprinkle with a little water and sea salt. 6. Repeat the process with the remaining portion of dough.
  • Bake in a preheated oven for 18 minutes, rotating trays halfway through, until golden brown and crisp. Transfer to trays to cool.
  • Allow the dish to come to room temperature before serving.
