Fennel-seed wafers with goat's cheese

Game day snack idea for munching.
Ingredients:
  • 150g (1 cup) plain flour
  • 2 tsp fennel seeds
  • Pinch of salt
  • 80ml (1/3 cup) lukewarm water
  • 300g goat's cheese, at room temperature
Instructions:
  • Preheat your oven to 200°C while you prepare 2 large baking trays with non-stick baking paper.
  • In a large bowl, combine the sifted flour with the fragrant fennel seeds and salt.
  • Gradually mix water into flour mixture using a round-bladed knife in a cutting motion until just combined. Turn onto lightly floured surface and knead until smooth.
  • Divide the dough into 8 equal portions and gently shape them into balls. Roll out each ball into a thin 10cm disc on a lightly floured surface, letting the fennel seeds subtly crush. Cut each disc into quarters.
  • Place the dough on lined trays and bake in a preheated oven for 3-4 minutes. Carefully flip the wafers and bake for another 3-4 minutes until golden patches appear. Transfer to a wire rack to cool completely.
  • Spread a dollop of creamy goat's cheese on each crisp wafer and serve promptly.
