Elevate your post-holiday meals with a delicious turkey salad featuring mayo, celery, cashews, herbs, and cranberries. Perfect for appetizers, lunches, sandwiches, wraps, or spreads.
Ingredients:
  • 1 cup whole cranberries
  • 0.5 cup fresh orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons white sugar
  • 0.75 cup cashew halves
  • 6 cups chopped cooked turkey
  • 2 celery ribs, diced
  • 0.75 cup mayonnaise, or to taste
  • 2 tablespoons applesauce
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground dried sage
  • 0.25 teaspoon dried thyme
  • ground black pepper, to taste
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and gracefully line a baking pan with aluminum foil.
  • In a pan, combine cranberries, orange juice, orange zest, and sugar. Boil until most liquid evaporates, about 5 minutes. Remove from heat and let it cool.
  • Spread cashews on a baking pan and roast in a preheated oven until golden brown, around 10 to 12 minutes. Let them cool before using.
  • Combine the turkey, celery, mayonnaise, applesauce, salt, sage, thyme, and pepper in a large bowl until well mixed. Gently mix in the cranberry mixture and refrigerate for at least 2 hours before serving.
