Cozy autumn soup with hearty ground beef, tomatoes, and veggies for a comforting and warming meal.
Ingredients:
  • 2 red bell peppers, seeded and diced
  • 1 bunch green onions, chopped
  • 6 cups water, or as needed
  • 2 (15 ounce) cans diced tomatoes, undrained
  • 1 (6 ounce) can tomato paste
  • 2 teaspoons Italian seasoning, or more to taste
  • 2 cups farfalle (bow tie) pasta
  • 0.75 cup frozen corn
  • 0.75 cup frozen peas
  • 1 (4.5 ounce) can sliced mushrooms, drained
Instructions:
  • In a hot Dutch oven, brown the beef with red bell peppers, green onions, and garlic until crumbly. Drain any grease. Stir in water, diced tomatoes, tomato paste, Italian seasoning, salt, and pepper. Bring to a boil.
  • Add the farfalle pasta to the savory ground beef-tomato mix and simmer gently for 10 minutes. Introduce the corn, peas, and mushrooms into the pot, cooking until the pasta is al dente, about 5 more minutes, stirring occasionally.
