Festive fruit pudding

Delicious fruit pudding with cinnamon, nutmeg, sugar, raisins, and apricots.
Ingredients:
  • 500.00 ml mixed fruit
  • 375.00 ml dried apricots, chopped
  • 375.00 ml raisins
  • 65.63 gm orange juice
  • 250g butter, room temperature
  • 180.00 gm brown sugar
  • 250.00 ml plain flour, sifted
  • 4.00 gm baking powder
  • 2.50 gm ground nutmeg
  • 1.25 gm ground cinnamon
  • 500.00 ml fresh breadcrumbs
  • Finely grated rind of 1 orange
  • 4 eggs
  • Custard, to serve
Instructions:
  • Mix the fruit, orange rind, and juice in a bowl. Cover and let it soak overnight.
  • Prepare the pudding basin by greasing and lining the base. Use electric beaters to mix the butter and sugar until pale and creamy. Gradually add eggs one at a time, mixing well after each addition. Stir in the fruit, then gently fold in the flour, baking powder, spices, and breadcrumbs until combined.
  • Gently pack the mixture into the prepared basin. Cover with greased baking paper and foil, secure with kitchen string around the rim, and place the basin on a trivet in a large saucepan or stock pot. Pour enough hot water to reach two-thirds up the side of the basin.
  • Simmer gently for 5 hours, adding boiling water as necessary. Let it cool, then refrigerate until Christmas day.
  • Reheat the pudding by gently boiling it for 2 hours using the method described above. Serve the pudding in wedges with a side of custard.
