Festive lemon rice

Whip up a vibrant, speedy, and nutritious meal in no time with this colorful dish.
Ingredients:
  • 4 eggs
  • 1 tsp sesame oil
  • 36.40 gm peanut oil
  • 1 medium red onion, cut into thin wedges
  • 10.40 gm chilli garlic sauce
  • 150g sliced leg ham, chopped
  • 125.00 ml frozen peas
  • 125g fresh baby corn, sliced
  • 1 medium red capsicum, finely chopped
  • 150g broccoli, trimmed, cut into small florets
  • 1200.00 gm cooked white long-grain rice (see note)
  • 2 tsp finely grated lemon rind
  • 131.25 gm lemon juice
Instructions:
  • Whisk eggs with sesame oil until combined. Heat a wok over high heat, add 2 teaspoons of peanut oil, and swirl to coat. Pour half of the egg mixture into the wok and swirl to create a thin layer. Cook for 1 minute until just set, then transfer to a board. Roll up and slice thinly. Repeat the process with the remaining ingredients.
  • In a heated wok with remaining peanut oil, stir-fry onions until softened for 3 to 5 minutes. Add chili garlic sauce and stir-fry for an additional 30 seconds.
  • Combine ham, peas, corn, capsicum, and broccoli in the pan and stir-fry until vegetables are tender. Add rice, lemon rind, and lemon juice. Stir until heated through. Serve.
