Whip up a quick and nutritious vegetarian scramble with just 5 ingredients in 10 minutes!
Ingredients:
  • 2 eggs
  • 40.00 ml unsweetened almond milk
  • 125g can black beans, rinsed, drained
  • 30g baby spinach
  • 20.00 ml crumbled Greek feta
Instructions:
  • Combine the eggs and almond milk in a small bowl, then season.
  • 1. Heat a non-stick frying pan over medium heat and give it a light spray of olive oil. Sauté the beans and spinach, stirring occasionally, until the spinach is wilted, for about 1-2 minutes. Transfer to a bowl.
  • Gently cook the egg mixture in the pan, stirring with a wooden spoon until it is just set. Add spinach and beans, then sprinkle with feta before serving.
