5-ingredient healthy vegetarian scrambled eggs ready in 10 minutes for a quick and satisfying breakfast!
Ingredients:
  • 40.00 ml unsweetened almond milk
  • 125g can black beans, rinsed, drained
  • 30g baby spinach
  • 20.00 ml crumbled Greek feta
Instructions:
  • Gently combine the eggs and almond milk in a small bowl, then season to taste.
  • Preheat a non-stick frying pan over medium heat and give it a light spray of olive oil. Cook the beans and spinach together, stirring occasionally, for 1-2 minutes until the spinach wilts. Then, transfer everything to a bowl.
  • Transfer the egg mixture to the pan and gently stir with a wooden spoon until the egg is just set. Add spinach and beans, then top with feta before serving.
