Feta chicken with grape tomato sauce

Elevate chicken breasts tonight with a stylish twist.
Ingredients:
  • 4 large chicken thigh fillets, trimmed
  • 100g feta
  • 4 large basil leaves
  • 4 slices prosciutto
  • 25g butter
  • 1 garlic clove, sliced
  • 250g grape tomatoes, halved
  • Salt & freshly ground black pepper
  • Mashed potato, to serve
  • Rocket salad, to serve
Instructions:
  • Preheat the oven to 220°C. Flatten the fillets and season with salt and pepper. Cut the feta into 4 thick sticks, then place a stick in the center of each fillet along with a basil leaf. Roll up the fillets and wrap each in a slice of prosciutto, securing with toothpicks.
  • In a large frying pan, melt butter with oil, then brown chicken parcels evenly for 5 minutes. Transfer to a roasting pan and bake for 15 minutes.
  • Next, gently sauté the garlic in the frying pan for 1 minute. Follow by adding the tomatoes and vinegar, cover, and simmer for 5 minutes until they are softened. Keep the dish warm until ready to serve.
  • Combine the flavorful chicken juices from the pan with the tomatoes. When ready to serve, don't forget to remove the toothpicks from the chicken and enjoy it with mashed potatoes and arugula. Finish by generously spooning the warm tomato sauce over the dish.
