Savory chicken with crispy bread crumb coating and creamy feta sauce - a quick and satisfying dinner option.
Ingredients:
  • 1/2 teaspoon grated lemon peel
  • 2 tablespoon lemon juice
  • 1 tablespoon chopped fresh mint leaves
  • Dash pepper
  • 8 teaspoons olive oil
  • 1 package (3.5 oz) reduced-fat feta cheese
  • 2/3 cup Progresso™ panko crispy bread crumbs
  • 2 tablespoons Italian seasoning
  • 4 boneless skinless chicken breasts (1 1/2 lb)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Instructions:
  • Combine lemon zest, lemon juice, fresh mint, 4 teaspoons of olive oil, and a dash of pepper in a small bowl. Mix thoroughly with a whisk, then add the cheese and incorporate it using the whisk. Set the mixture aside for later use.
  • Combine bread crumbs and fragrant Italian seasoning in a shallow bowl. Season both sides of the chicken with salt and a touch of pepper, then coat it thoroughly with the bread crumbs mixture.
  • Heat the remaining oil in a nonstick skillet until shimmering. Cook the chicken for a few minutes on each side over medium-high heat until it reaches an internal temperature of at least 165°F and the juices run clear.
  • Place a tender chicken breast on each plate and generously spoon 2 1/2 tablespoons of creamy feta sauce over the top.
