Tantalizing summer salad with crispy lettuce, savory chicken, creamy feta, fresh strawberries, and roasted strawberry-balsamic dressing.
Ingredients:
  • 1 cup chopped romaine lettuce
  • 1 cup fresh spinach
  • 1 cup chopped kale
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cooked chicken breast, sliced
  • 0.5 cup sliced almonds
  • 0.25 cup crumbled feta cheese
  • 1 cup fresh strawberries, hulled and quartered
  • 1 tablespoon honey
  • 1 clove garlic, minced
Instructions:
  • Combine romaine, spinach, and kale in a medium mixing bowl. Sprinkle sliced strawberries over the greens. Top with chicken slices. Finish with almond slices and feta cheese for a delicious garnish.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and elegantly line a baking sheet with parchment paper.
  • Place quartered strawberries elegantly on the prepared baking sheet and generously sprinkle with sugar for added sweetness.
  • Roast in the preheated oven for 20 minutes until tender and golden. Allow to cool for 10 minutes before serving.
  • In a food processor, blend together the roasted strawberries, balsamic vinegar, olive oil, honey, mustard, garlic, salt, and pepper until smooth. Pour the dressing over the salad and enjoy.
