Feta filo fingers

Honey-drizzled feta and lemon filo fingers: the ultimate party snack.
Ingredients:
  • 200g pkt creamy feta
  • 12 sheets filo pastry
  • 40.00 ml finely grated lemon rind
  • 40.00 ml finely shredded fresh mint, plus extra sprigs, to serve
  • 6.00 gm black sesame seeds
  • Honey, to drizzle
  • Lemon wedges, to serve
Instructions:
  • Preheat the oven to 200C/180C fan forced. Line 2 baking trays with baking paper. Slice the feta into eight 1cm-thick pieces, then cut each slice into thirds.
  • Lay out 3 sheets of filo and lightly spray each with oil. Cover the remaining filo with tea towels to keep them moist. Cut each sheet in half, then fold each piece in half. Spray again with oil. Place a piece of feta, lemon rind, and mint at one end of each piece. Fold, roll, and place seam side down on a tray. Continue with the rest to make 24 rolls. Sprinkle sesame seeds on top.
  • Bake until golden, then allow to cool briefly before transferring to a platter. Drizzle with honey, sprinkle with mint, and serve with lemon wedges.
