Fetta and mint filo triangles

Irresistible mint and feta crispy triangles - a heavenly comfort food experience not to be missed!
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 1 green onion, thinly sliced
  • 1 garlic clove, crushed
  • 40.00 ml chopped fresh mint leaves
  • 2 tsp chopped fresh dill
  • 1 tsp finely grated lemon rind
  • 50g fresh ricotta, crumbled
  • 100g fetta, crumbled
  • 1 egg yolk
  • 9 sheets filo pastry
  • 60g butter, melted
Instructions:
  • Preheat your oven to 180C/160C fan-forced and line a large baking tray with baking paper.
  • In a small frying pan over medium heat, warm oil. Sauté onion and garlic for 1 to 2 minutes until onion softens slightly. Transfer to a bowl and let cool for 5 minutes. Mix in mint, dill, lemon rind, ricotta, feta, and egg yolk. Season with pepper and stir until well combined.
  • Lay down one sheet of filo pastry, brush lightly with melted butter, and stack another sheet on top. Repeat layering with melted butter and one more sheet of filo. Cut the filo lengthwise into 4 equal strips with one short end facing you. Spoon 1 tablespoon of feta mixture onto the bottom short end of a filo strip. Fold into a triangle shape, continuing to maintain the triangle as you fold. Place on a baking sheet and repeat using the remaining ingredients. Brush the triangles with melted butter and season with salt and pepper.
  • Bake until golden brown, approximately 15-20 minutes. Let it cool on the tray for 5 minutes before serving warm.
