Tangy orange cherry sauce elevates quick and satisfying chicken pasta dish, ready in just 25 minutes - ideal for a delicious dinner.
Ingredients:
  • 6 ounces uncooked fettuccine
  • 1/2 pound cut-up boneless chicken breast for stir-fry
  • 1 1/2 cups or 1 package (9 ounces) frozen whole green beans
  • 1 cup orange juice
  • 1 tablespoon cornstarch
  • 1 tablespoon orange marmalade
  • 1/4 cup dried cherries
  • 1/4 cup chopped walnuts, toasted* if desired
Instructions:
  • Prepare the fettuccine according to package instructions, then drain.
  • While the fettuccine is cooking, spray a 12-inch nonstick skillet with cooking spray and heat over medium heat. Cook the chicken and salt for 2 to 3 minutes, stirring occasionally, until the chicken is browned. Add the frozen green beans, cover, and cook over medium heat for 3 to 4 minutes, stirring occasionally, until the beans are crisp-tender.
  • Whisk together orange juice and cornstarch until well combined. Stir in marmalade, cherries, and chicken. Bring to a boil while stirring continuously, then simmer over medium heat. Cover and cook for 2 to 3 minutes until beans are tender and chicken is cooked through. Add fettuccine to the mix, toss everything together, and finish by sprinkling walnuts on each serving.
