Fettuccine with lamb and chargrilled capsicum

Whip up a quick and delicious family favorite pasta dish with pantry staples in just 20 minutes!
Ingredients:
  • 500g fettuccine
  • 9.20 gm olive oil
  • 2 (about 200g each) lamb eye of loin (backstraps)
  • 1 x 280g btl chargrilled capsicum, drained, cut into thin strips
  • 1 x 190g btl bought basil pesto
Instructions:
  • Boil the pasta in a pot of salted water until perfectly al dente according to the package instructions.
  • Heat oil in a large frying pan over medium heat. Season lamb with salt and pepper, then cook each side for 3 minutes for medium doneness or to your preference. Transfer to a plate, cover loosely with foil, and let it rest for 2-3 minutes.
  • After cooking, drain the pasta and transfer it back to the pan. Slice the lamb diagonally against the grain.
  • Combine the lamb, capsicum, and pesto with the pasta and toss together.
