Tropical Australian summer bounty in one dish.
Ingredients:
  • 150g snow peas
  • 500g fettuccine
  • 60ml (1/4 cup) olive oil
  • 1 tsp crushed garlic
  • 16 medium green prawns, shelled, de-veined, tails on
  • 20.00 ml chopped fresh oregano
  • 1 tsp chopped fresh thyme
  • 189.38 gm thickened cream
  • 3 mangoes, peeled and cut into thin slices
Instructions:
  • Briefly cook snow peas in salted boiling water, then cool them in cold water. Drain and set aside.
  • Cook the fettuccine in a pot of boiling salted water following the package instructions. Drain the pasta.
  • In a large frying pan over medium-high heat, sizzle garlic and prawns until the prawns turn pink, about 2-3 minutes. Set the prawns aside. Stir in herbs, cream, and snow peas and cook for an additional 1-2 minutes.
  • Combine the pasta with the luxurious cream sauce, sweet mango slices, and succulent cooked prawns.
