Fettuccine with Sweet Pepper-Cayenne Sauce

Sautéed red bell peppers and garlic in a creamy cayenne sauce with chicken broth - a delicious fettuccine dinner.
Ingredients:
  • 12 ounces dry fettuccine pasta
  • 2 red bell peppers, julienned
  • 3 cloves garlic, minced
  • 0.75 teaspoon cayenne pepper
  • 1 cup reduced fat sour cream
  • 0.75 cup chicken broth
  • 0.75 cup grated Parmesan cheese
  • salt and pepper to taste
Instructions:
  • Bring a pot of salted water to a rolling boil. Cook pasta until al dente, about 8-10 minutes. Drain well.
  • In a large skillet, mist with cooking oil and sauté red bell peppers, garlic, and cayenne pepper over medium heat for 3 to 5 minutes.
  • Combine sour cream and broth in the pan, letting it simmer without a lid for 5 minutes. Take the pan off the heat and gently fold in the cheese.
  • Mix the warm pasta with the flavorful sauce, then generously season with salt and pepper before serving.
