Delicious keto Chinese stir-fry with chicken thighs and fire-roasted veggies.
Ingredients:
  • 0.5 cup chopped onion
  • 0.5 cup chopped red bell peppers
  • 0.5 cup sliced fresh mushrooms
  • 0.5 cup chopped green beans
  • 2.5 tablespoons sesame oil, divided
  • 1 tablespoon rice vinegar
  • 1.5 teaspoons chili-garlic sauce
  • 1 pound boneless skinless chicken thighs, cut into bite-size pieces
  • 1 clove garlic, minced
  • 0.5 teaspoon minced fresh ginger root
  • 1 tablespoon everything bagel seasoning
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) and elegantly line a rimmed baking sheet with aluminum foil.
  • In a bowl, mix together onion, bell pepper, mushrooms, green beans, and 1 tablespoon of sesame oil until evenly coated. Spread the vegetable mixture onto the baking sheet.
  • Bake vegetables in the preheated oven for 15 minutes, remembering to turn them after 8 minutes.
  • In a wok set over medium-high heat, warm the remaining 1 1/2 tablespoons of sesame oil. Stir in rice vinegar and chili-garlic sauce, followed by chicken, minced garlic, and ginger. Stir-fry for 5 minutes, then mix in roasted vegetables. Sprinkle with bagel seasoning just before serving.
