Spicy Mexican baked chicken thighs with a fiery sweet red glaze.
Ingredients:
  • 4 chicken thighs
  • 0.5 cup Mexican-style hot sauce (such as Valentina)
  • 1 tablespoon paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon brown sugar, or more to taste
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously grease a small baking dish with cooking spray.
  • Put the chicken thighs in the baking dish. Combine hot sauce, paprika, cayenne pepper, and brown sugar in a bowl, then pour over the chicken thighs. Cover the dish with foil.
  • Bake in the preheated oven for 20 minutes, then uncover and bake for an additional 20 minutes until chicken is fully cooked and the sauce has thickened and caramelized. Verify doneness by ensuring the center of a thigh reaches 165 degrees F (74 degrees C) with an instant-read thermometer.
