Elevate Taco Tuesday with flavorful global-inspired tacos!
Ingredients:
  • 8 soft tacos
  • 2 chicken breasts
  • 1 clove fresh garlic sliced
  • 10.00 gm Mexican spices
  • 18.20 gm olive oil for the rub
  • 100mL sour cream (or natural yoghurt)
  • Salt and pepper, to taste
  • 150g DON® Mild Hungarian salami
  • 2 corn cob-grilled or seared in the pan
  • 1 small chilli habanero, thinly sliced
  • 1 red onion, diced
  • 1 fresh tomato, diced
  • 1 avocado, diced
  • 20.00 ml coriander, chopped
  • 1 lime, squeeze to taste
  • 1 carrot, thinly sliced
  • 1 zucchini, thinly sliced
  • 10mL apple cider vinegar
Instructions:
  • Butterfly the chicken to create thinner pieces. Coat it with vibrant Mexican spice blend, minced garlic, 1 tablespoon of luxurious olive oil, and a sprinkle of salt and pepper. Let it soak up the flavors for 25 minutes.
  • Peel the husk off the corn, rinse it in water, then season it with salt, pepper, and a drizzle of olive oil. Heat a skillet or grill pan over medium-high heat and char the corn on all sides for 7 – 8 minutes. Let it cool down before cutting off the kernels and transferring them to a large bowl.
  • Peel off the skin from the salami and cut it into large pieces. In a hot fry pan, cook half of the salami until golden brown to release its spicy flavor. Add chicken on top with a drizzle of olive oil for extra flavor.
  • Take out the salami from the pan and let the chicken cook for 8 – 10 minutes. Set aside to rest for 5 – 7 minutes as you get your tacos and filling ready.
  • Heat the tacos in a hot pan for 30 seconds, then cover them with a cloth to keep warm.
  • Shred the chicken using forks, then combine it in a bowl with half of the cooked salami and mix well.
  • Combine the red onion, tomato, chili, fresh salami, coriander, lime juice, and avocado with the bowl of corn and mix well.
  • Mix the zucchini and carrot in a bowl, then drizzle with apple cider vinegar dressing.
  • Layer a spoonful of the chicken and salami mixture onto a taco, followed by the salsa mixture, zucchini, carrot, and a dollop of sour cream.
