Spicy Mex red rice

Spice up your meal with this flavorful Mexican rice dish!
Ingredients:
  • 200.00 gm white long-grain rice
  • 44.40 gm tomato paste
  • 382.50 gm chicken style liquid stock
  • 1 tsp dried chilli flakes
  • 1 tsp dried oregano
  • 420g can red kidney beans, drained, rinsed
  • 62.50 ml chopped fresh coriander leaves
  • Fresh coriander leaves, to serve
Instructions:
  • In a saucepan over medium-high heat, combine rice, tomato paste, stock, chili flakes, oregano, and 1/2 cup cold water. Bring to a boil, then lower the heat, cover, and simmer for 10 minutes until the rice is almost tender.
  • Add the beans and cover to simmer for 2 to 3 minutes until they absorb the liquid and are heated through. Season with salt and pepper, then stir in coriander. Serve garnished with fresh coriander leaves.
