Spicy red pepper and zesty orange jazz up juicy pork tenderloins for a flavorful twist.
Ingredients:
  • 1 pork tenderloin (about 3/4 lb)
  • 1/2 teaspoon seasoned salt
  • 1/3 cup orange marmalade
  • 1/2 teaspoon crushed red pepper flakes
Instructions:
  • Preheat oven to 400°F. Season pork with seasoned salt and pepper, then place it on a rack in a shallow pan. Ensure the ovenproof meat thermometer tip is inserted into the thickest part of the pork.
  • Bake for 18 minutes without covering.
  • In a small bowl, combine orange marmalade and pepper flakes. Set aside half of the mixture. Use a brush or spoon to coat the pork with the remaining marmalade mixture.
  • Continue baking until the pork has a slight blush of pink in the center and a meat thermometer inserted reads 160°F.
  • Slice the pork into 1/2-inch pieces and serve with the remaining marmalade mixture.
