Crispy corn tortilla pizzas for a festive Cinco de Mayo twist.
Ingredients:
  • 1 (15 ounce) can refried beans
  • 6 (7 inch) corn tortillas
  • 1.75 cups shredded Mexican cheese blend
  • 3 roma (plum) tomatoes, seeded and diced
  • 2 green onions, sliced
  • 0.5 cup chopped fresh cilantro
  • 1 (4 ounce) can sliced black olives, well drained
Instructions:
  • Warm up refried beans in a microwave-safe bowl in the microwave on high for approximately 2 minutes, remembering to stir after 1 minute.
  • Coat each corn tortilla with cooking spray and place them on a wire rack.
  • Preheat a non-stick skillet over medium-high heat. Pan-fry one side of each tortilla until lightly browned, approximately 3 minutes. Place the tortillas back on the wire rack with the browned side facing up.
  • Evenly spread a delicate layer of refried beans on the tortillas, leaving a small border about 1/2 inch from the edge.
  • Top the refried beans with a generous sprinkle of Mexican cheese blend.
  • Gently place the tortilla pizza back in the skillet, with the bean side facing up.
  • Fry until cheese is melting, about 1 minute more, then place the tortilla pizza back on the wire rack. Repeat for the rest of the pizzas.
  • Layer the vibrant colors of fresh tomatoes, green onions, cilantro, and olives over the bubbling, golden melted cheese.
  • Cut the pizzas into slices for serving.
