Fiesta Taco Salad with Beans

Quick and delicious taco salad recipe from Betty Crocker's Diabetes Cookbook ready in just 20 minutes!
Ingredients:
  • 1 can (15 oz) black beans, drained, rinsed
  • 1/2 cup taco sauce
  • 6 cups bite-size pieces lettuce
  • 1 medium green bell pepper, cut into strips
  • 2 medium tomatoes, cut into wedges
  • 1/2 cup pitted ripe olives, drained
  • 1 cup corn chips
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1/2 cup reduced-fat Thousand Island dressing
Instructions:
  • Heat beans and taco sauce in a 2-quart saucepan over medium heat for 4 to 5 minutes, stirring occasionally, until heated through.
  • Combine lettuce, bell pepper, tomatoes, olives, and corn chips in a large bowl. Top with bean mixture and toss to combine. Sprinkle with cheese and serve with dressing right away.
