Fiesta Taco Casserole

Create a delicious taco casserole for a fiesta of flavors.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 can (15 to 16 oz) spicy chili beans in sauce, undrained
  • 1 cup thick & chunky salsa
  • 2 cups coarsely broken tortilla chips
  • 4 medium green onions, sliced (1/4 cup)
  • 1 medium tomato, chopped (3/4 cup)
  • 1 cup shredded Cheddar or Monterey Jack cheese (4 oz)
  • Tortilla chips, if desired
  • Shredded lettuce, if desired
  • Additional thick & chunky salsa, if desired
Instructions:
  • Preheat oven to 350°F. Brown the beef in a 10-inch skillet over medium heat for 8 to 10 minutes, stirring occasionally; then drain. Add beans and 1 cup of salsa, bring to a boil, stirring occasionally.
  • Spread a layer of broken tortilla chips at the bottom of an ungreased 2-quart casserole dish. Add the beef mixture on top of the chips, then generously sprinkle with onions, tomatoes, and cheese.
  • Bake the casserole uncovered for 20 to 30 minutes until it's hot and bubbly. Surround the dish with tortilla chips and serve with lettuce and extra salsa on the side.
