Vibrant roast turkey adds a touch of sweetness to your holiday feast.
Ingredients:
  • 40.00 ml chopped pistachios
  • 45g dried fig
  • 1 tsp thyme leaves
  • 135g breadcrumbs
  • 20g unsalted butter, cubed
  • salt and cracked black pepper
  • 1.5kg turkey breast fillet, trussed
Instructions:
  • Preheat oven to 180°C. Grease a wire rack and place it in a large roasting pan, then fill the pan with enough hot water to reach a depth of about 2cm.
  • Mix together the pistachios, figs, thyme, breadcrumbs, butter, salt, and pepper in a bowl until crumbly, using your fingers to combine.
  • Stuff the turkey cavity with the delicious stuffing, then transfer the turkey onto the greased wire rack.
  • Roast the turkey in the oven for 45 minutes, then cover it with foil and continue cooking for another 45-55 minutes until fully cooked. Let it rest for 5 minutes before slicing.
