Elevate your granola with honey-toasted nuts and sweet dried fruit.
Ingredients:
  • 180g (2 cups) rolled oats
  • 85g (1/2 cup) blanched almonds
  • 75g (1/2 cup) pistachio kernels
  • 65g (1 cup) shredded coconut
  • 45g (1/4 cup) pepitas
  • 125ml (1/2 cup) honey
  • 80g butter, chopped
  • 180g dried figs, coarsely chopped
  • 115g (3/4 cup) dried cranberries
  • Milk, to serve
Instructions:
  • Preheat your oven to 160C. Line a big baking tray with baking paper, then mix oats, almonds, pistachios, coconut, and pepitas in a large bowl.
  • Combine the honey and butter in a small saucepan, stirring over medium-low heat for 3-5 minutes until the butter melts and the mixture turns smooth. Drizzle the mixture over the oats and stir to coat evenly.
  • Spread the oat mixture on the prepared tray, bake for 20 minutes, stirring every 5 minutes, until golden and crisp. Let it cool completely.
  • Mix in the figs and cranberries, then enjoy with a splash of milk.
