Fig and prosciutto tart recipe

Delicious fig and prosciutto tart on puff pastry with rocket, topped with balsamic vinegar.
Ingredients:
  • 1 1/2 sheets frozen puff pastry, just thawed
  • 60g pkt Baby Rocket
  • 4 ripe figs, quartered
  • 6 slices prosciutto, coarsely torn
  • 20.00 ml balsamic glaze
Instructions:
  • Preheat the oven to 200°C and line a baking tray with baking paper. Place the pastry sheets on the lined tray, join them together to form a rectangle. Score a 2cm border around the edge of the pastry without cutting all the way through. Prick the pastry inside the border with a fork. Bake for 20-25 minutes until golden brown and puffed.
  • Assemble the pastry on a large serving platter. Layer with rocket, fig, and prosciutto. Finish by drizzling with balsamic glaze.
