Fig and prosciutto salad

Delicious fig, walnut, witlof, and prosciutto starter - gluten-free and ready in just 15 minutes!
Ingredients:
  • 2 witlof
  • 4 slices prosciutto
  • 4 fresh figs, quartered
  • 50g walnuts, toasted
  • 50g pecorino, thinly shaved
  • 80ml (1/3 cup) walnut oil
  • 36.40 gm extra virgin olive oil
  • 20.00 ml Maggie Beer Verjuice
  • 20.00 ml fresh chives, finely chopped
  • 5.90 gm Dijon mustard
Instructions:
  • Prepare the witlof by trimming, halving, and cutting it into thick slices diagonally. Combine the witlof, prosciutto, fig, and walnuts in a large bowl, then sprinkle with cheese.
  • Combine dressing ingredients in a bowl and mix well. Drizzle over salad and toss to coat evenly.
