Figs and pecans cake: A decadent party treat with rich flavors.
Ingredients:
  • cooking spray
  • 2 cups white sugar
  • 3 eggs
  • 1 cup vegetable oil
  • 1 cup whole milk
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 2 cups mashed fig preserves
  • 1 cup pecan pieces
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 12-cup fluted tube pan with cooking spray.
  • In a bowl, whisk together sugar and eggs until the sugar dissolves using an electric mixer. Then, stir in vegetable oil followed by pouring in milk and mixing until well combined.
  • In a separate bowl, mix flour, cinnamon, baking soda, and salt. Blend into the creamed sugar mixture. Gently fold in fig preserves and pecan pieces.
  • Transfer the batter into the pan that has been prepared.
  • Bake in the preheated oven for about 1 hour until a toothpick comes out clean from the center. Let it cool in the pan for 10 minutes, then invert onto a wire rack to cool completely before slicing.
