Elevate your dessert table with a flavorful fig pudding infused with red wine.
Ingredients:
  • 375g dried figs
  • 120ml red wine
  • 80.40 gm golden syrup
  • 120g unsalted butter, softened
  • 120g soft brown sugar
  • 60g fresh wholemeal breadcrumbs
  • 110g self-raising flour
  • 1 orange, rind grated
  • Cream or custard, to serve
Instructions:
  • Prepare a 1-liter pudding basin by greasing it and lining the base with a circle of buttered non-stick baking paper.
  • In a saucepan, combine figs, wine, golden syrup, and 1/4 cup water over low heat. Simmer gently for 10 minutes. Remove figs, then increase heat to high and boil to reduce the liquid into a syrup.
  • Cut the figs in half and arrange them to cover the bottom of the basin. Drizzle the reduced syrup over the figs, then dice the remaining figs into small pieces.
  • Cream the butter and sugar until light and fluffy. Gradually add the eggs, one at a time, then gently fold in the breadcrumbs. Sift in the flour, spices, remaining figs, and rind, stirring until well combined. Spoon the mixture on top of the figs, cover the basin with pleated baking paper, secure with kitchen string, and then cover with foil. Place the basin in a pan with water reaching halfway up the sides. Bring to a boil and simmer for 1 hour and 15 minutes. Let it rest for 10 minutes, then flip onto a plate and serve with cream or custard.
