Spicy jalapeno and garlic marinade transform Filipino chicken adobo into a flavor-packed dish with a kick.
Ingredients:
  • 4 tablespoons low-sodium soy sauce
  • 2 jalapeno peppers, seeded and sliced
  • 3 cloves fresh garlic, minced
  • 1 pound chicken wings
  • 2 tablespoons vegetable oil
  • 1.5 cups water
  • 3 bay leaves
  • 1 teaspoon whole peppercorns
  • 2 tablespoons white vinegar
  • 1 teaspoon white sugar, or to taste
  • 0.25 teaspoon fine salt, or to taste
Instructions:
  • In a large glass or ceramic bowl, combine soy sauce, jalapeno peppers, and garlic. Add chicken wings and mix well to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to marinate.
  • Take the chicken wings out of the marinade and gently shake off the extra marinade, keeping it aside for later use.
  • In a large saucepan over medium heat, warm oil. Cook chicken wings in hot oil, frying each side for 2 minutes. Gradually pour in reserved marinade with garlic and water. Bring to a boil and add bay leaves, peppercorns. Simmer for about 20 minutes until chicken is tender and reaches 165°F (74°C) near the bone using a thermometer.
  • Add vinegar to the pot, stir well, and let it cook for 5 minutes. Give it another good stir, then season with sugar and salt to your liking. Serve the dish while it's hot.
