Tangy Filipino chicken stew with vinegar, soy sauce, garlic, onion, and creamy coconut milk.
Ingredients:
  • 4.5 pounds chicken leg quarters
  • 0.75 cup white vinegar
  • 0.75 cup water
  • 1 teaspoon white sugar
  • 0.25 cup soy sauce
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns, crushed
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • salt to taste
  • 1 (14 ounce) can coconut milk
Instructions:
  • In a large pot, mix together the chicken, vinegar, water, sugar, soy sauce, bay leaves, crushed peppercorns, onion, and garlic. Bring to a boil for 2 minutes. Reduce the heat to medium-low and simmer for 30 minutes.
  • Transfer the chicken to a large serving platter and keep warm. Increase the heat to medium and simmer until the liquid reduces by one-quarter, approximately 10 minutes. Season with salt, then stir in the coconut milk. Cover and simmer until the coconut milk thickens, about 10 minutes. Serve the sauce over the chicken.
