Salmon stew in coconut broth with broccoli and tomatoes, served over fluffy white rice.
Ingredients:
  • 1 tablespoon vegetable oil
  • 3 drops sesame oil, or to taste
  • 0.25 cup diced onion
  • 2 diced green onions, white and green parts
  • 1 teaspoon garlic powder
  • 0.5 cup diced fresh tomato
  • 2 tablespoons fish sauce
  • 1 cup vegetable broth
  • 1 (11 ounce) salmon side, bones removed with pliers
  • 1 cup coconut milk
  • 1.5 cups broccoli florets
  • 1 cup chopped kale
Instructions:
  • Preheat Instant Pot® using Saute function. Heat vegetable oil along with sesame oil and saute onion and green onions for 1 minute. Stir in garlic powder and cook for 1 more minute. Add diced tomato and fish sauce, cooking for about 2 minutes until heated through.
  • Pour in the flavorful vegetable broth and gently nestle the salmon over the liquid and vegetables. Turn off Saute mode by selecting Cancel, then securely lock the lid in place. Follow the manufacturer's instructions to set the Instant Pot to high pressure for 5 minutes. Let the pressure naturally build for 10 to 15 minutes.
  • Once pressure has released naturally for 10 to 20 minutes following manufacturer's instructions, remove the lid. Add coconut milk, followed by broccoli and kale. Gently mix vegetables around the sides of the salmon, being careful not to break it apart. Sprinkle salt and pepper over the top. Secure the lid and set the vent to "Sealing."
  • Use the Steam function to steam for 2 minutes. Release pressure by turning the seal to "Venting" and remove the lid.
