Elevate grilled steaks with tangy chilli jam.
Ingredients:
  • 2 zucchini, trimmed, thinly sliced
  • 1 red capsicum, seeded, quartered
  • 1 kumara, peeled, thinly sliced
  • 4 beef fillet steaks, trimmed
  • Mixed salad leaves, to serve
  • 125.00 ml white wine vinegar
  • 90.00 gm brown sugar
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 2 tsp chilli, chopped
  • 1 tsp ginger, grated
Instructions:
  • For the Chilli Jam, simply mix all the ingredients in a saucepan, then bring to a boil. Lower the heat and simmer gently for 20-25 minutes until thickened to a jam-like consistency. Finally, take it off the heat.
  • Prepare the vegetables in a bowl, generously spray them with oil, and toss to coat. Preheat a char-grill to high heat and grill the vegetables for 2-3 minutes per side until tender. Transfer to a serving plate.
  • Sear steaks for 3-5 minutes on each side until cooked to your liking, then plate with chili jam, char-grilled vegetables, and salad.
