Elevate flavors with exotic aromas in filo triangles.
Ingredients:
  • 9.20 gm olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 500g lean lamb mince
  • 200g kumara (orange sweet potato), peeled, grated
  • 8 sheets filo pastry
  • olive oil cooking spray
  • 165.00 ml plain yoghurt
  • 40.00 ml chopped mint
  • 80g salad leaves, to serve
Instructions:
  • Preheat your oven to 200°C and prepare a baking tray by lining it with parchment paper.
  • In a large non-stick frying pan over medium-low heat, heat oil. Add onion and cook until soft, about 5 minutes. Stir in garlic, cumin, and coriander, and cook for 30 seconds.
  • Place the mince in a hot frying pan and cook, stirring frequently, until browned, about 5 minutes. Stir in the kumara and continue to cook for about 10 minutes until the liquid has evaporated and the mixture thickens. Allow the mixture to cool before dividing it into 8 portions.
  • Lay a filo sheet on a clean surface and lightly spray with oil. Fold it in half lengthwise. Spoon 1 portion of the lamb mixture onto one end of the filo. Fold it over to create a triangle shape. Repeat with the remaining filo and lamb mixture using the same technique.
  • Lay out the triangles on a baking tray and coat them with a light spray of oil. Bake until they turn a beautiful golden color, about 20 minutes.
  • Mix together creamy yoghurt and fresh mint for a delightful flavor combination.
