Lamb, spinach and feta triangles

Delicious lamb, spinach, and feta filled crunchy triangles.
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, chopped
  • 400g lamb mince
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 40.00 ml currants
  • 40.00 ml pine nuts
  • 50g baby spinach
  • 1/2 small lemon, juiced
  • 80g feta, crumbled
  • 18 sheets filo pastry
  • 100g butter, melted, cooled
  • Tzatziki, to serve
  • Greek salad, to serve
Instructions:
  • Heat oil in a large non-stick pan over medium heat. Add onion and cook for 2-3 minutes until soft. Turn up the heat to high, add mince and cook for 4-5 minutes until browned. Stir in garlic, cumin, coriander, currants, and pine nuts for another 2 minutes until thickened.
  • Add fresh spinach and a burst of tangy lemon juice. Remove from the heat and gently stir until the spinach wilts. Transfer the mixture to a bowl and let it cool completely before folding in the creamy feta cheese.
  • Preheat your oven to 200°C. Line 2 baking trays with baking paper. Brush one pastry sheet with luxurious melted butter, then layer another sheet on top and repeat the buttery brush. Keep layering to create a tantalizing stack of 3 sheets. Cut lengthways into 3 strips. Repeat this process with the rest of the pastry and butter for a delectable treat.
  • Place a generous spoonful of mince mixture onto one end of a pastry strip. Fold the pastry over to create a triangle shape, then continue folding the triangle over itself until you reach the end of the strip. Transfer to a prepared tray and brush the top with butter. Repeat with the rest of the pastry and mince mixture.
  • Bake triangles until pastry is golden and crisp, about 12-15 minutes. Enjoy your hot triangles with tzatziki and Greek salad.
