Lamb, spinach & feta pide

Indulge in a mouthwatering Turkish lamb and feta pide.
Ingredients:
  • 375g (2 1/2 cups) plain flour
  • 2 tsp (7g/1 sachet) dried yeast
  • 2.40 gm salt
  • 250ml (1 cup) lukewarm water
  • Olive oil, to grease
  • 1 egg, lightly whisked
  • 1 brown onion, finely chopped
  • 5.00 gm Middle Eastern spice mix
  • 350g lamb mince
  • 1 large bunch English spinach, stems trimmed, washed, dried, finely shredded
  • 150g Greek feta, crumbled
  • 2 eggs, lightly whisked
Instructions:
  • In a bowl, mix the flour, yeast, and salt. Add water and combine until a soft dough forms, adding 1-2 extra tablespoons of water if needed. Transfer the dough to a lightly floured surface and knead for 10 minutes until smooth and elastic. Brush a large bowl with oil, place the dough inside, cover with plastic wrap, and let it rise in a warm, draft-free spot for 1 1/2 hours until doubled in size.
  • Prepare the filling by heating oil in a large frying pan over medium heat. Sauté onion for about 6 minutes until softened. Add spice mix, cook for 1 minute until fragrant. Increase heat and brown the mince for 5 minutes. Add spinach, cook until wilted, then mix in feta. Let it cool before adding the egg and stirring well.
  • Preheat the oven to a toasty 200°C and prepare 2 baking trays with non-stick baking paper.
  • Press your fist into the center of the dough, then transfer it to a lightly floured surface and knead until smooth. Divide the dough into 4 equal parts. Roll out each portion on a floured surface into an oval shape about 16cm wide and 26cm long. Spoon one-quarter of the filling down the center. Fold in the sides slightly, leaving the center open. Pinch the dough together about 5cm from each end of the pide, with the filling exposed. Place each pide on a lined tray. Cover with a clean tea towel and let it rest for 30 minutes.
  • Brush the pides with egg and bake in the oven for 20-25 minutes, swapping trays halfway through, until they are golden.
