Ingredients:
  • 190g (1 cup) couscous
  • 250ml (1 cup) boiling water
  • 18.20 gm olive oil
  • 400g lamb strips
  • 1 red onion, cut into thin wedges
  • 1 red capsicum, halved, deseeded, cut into 1cm-thick strips
  • 2 garlic cloves, crushed
  • 250g (1 punnet) cherry tomatoes, halved
  • 1 bunch English spinach, trimmed, washed, dried, shredded
  • 30.00 ml red wine vinegar
  • 80g reduced-fat feta, crumbled
  • Freshly ground black pepper
Instructions:
  • In a heatproof bowl, combine couscous and boiling water, gently stirring with a fork. Cover with foil and let sit for 2 minutes until liquid is absorbed. Fluff the grains with a fork to separate.
  • In a sizzling wok, heat 1 teaspoon of oil until shimmering. Cook half of the lamb, stirring constantly, until golden and tender, about 1-2 minutes. Remove to a plate and tent with foil. Cook the remaining lamb in 1/2 teaspoon of oil in the same manner.
  • - Lower the heat to medium and pour in 1/2 teaspoon of oil into the wok. Add onion, capsicum, and garlic. Stir-fry for 2-3 minutes until the vegetables slightly soften. Introduce tomatoes and stir-fry for another minute. Toss in spinach, vinegar, lamb, and the rest of the oil. Stir for 1 minute until the spinach just wilts.
  • Serve the couscous in bowls and layer with the flavorful lamb and spinach mixture. Finish with crumbled feta and a sprinkle of pepper for extra deliciousness.
