Quick and delicious lamb stir-fry with noodles, perfect for busy weeknights.
Ingredients:
  • 300g packet dried rice stick noodles
  • 500g lamb stir-fry strips
  • 89.10 gm hoisin sauce
  • 36.40 gm peanut oil
  • 6 green onions, cut into thin strips
  • 1 bunch English spinach, trimmed, coarsely chopped
  • 21.00 gm soy sauce
Instructions:
  • Place the noodles in a spacious heatproof bowl and cover them with boiling water. Gently separate the noodles with a fork and let them stand for 5 minutes until they are tender. Drain the noodles before proceeding.
  • Mix the lamb with half of the hoisin sauce in a bowl until evenly coated.
  • Heat half of the oil in a wok over high heat. Add 2/3 of the onion and stir-fry until just tender. Transfer to a bowl. Add the rest of the oil to the wok and stir-fry the lamb in batches until browned. Return lamb and onion to the wok along with spinach, noodles, soy sauce, and hoisin sauce. Stir-fry until heated through. Top with the remaining onion and serve.
