Delicious Mongolian lamb stir-fry with snow peas ready in 30 minutes!
Ingredients:
  • 2.50 gm cornflour
  • 18.20 gm peanut oil
  • 400g lamb backstraps, thinly sliced
  • 1 red onion, cut into wedges
  • 6 spring onions, cut into 5cm lengths
  • 200g snow peas, ends trimmed, halved diagonally
  • 220g jar Five Tastes Mongolian paste
  • 125.00 ml coriander leaves
  • Toasted sesame seeds, to serve
  • Thinly sliced chilli, to serve
  • Steamed jasmine rice, to serve
Instructions:
  • In a bowl, mix sugar and cornflour together. Stir in 2 tablespoons of water until well combined.
  • In a sizzling wok, sear one-quarter of the lamb in 1 teaspoon of hot oil for 2 minutes until deliciously golden. Transfer to a bowl and continue with remaining lamb in 3 more mouthwatering batches, adding a splash of oil each time.
  • Saute the red onion and spring onion in the wok until slightly softened. Toss in the snow peas and stir-fry until tender. Mix in the lamb and paste and stir until heated through. Pour in the cornflour mixture and stir until the sauce thickens. Remove from heat and mix in half of the coriander.
  • Divide the mixture into individual serving bowls. Garnish with the leftover coriander, sesame seeds, and chilli. Serve with a side of rice.
