Fish and sweet potato chips

Healthy fish and chips with a tasty twist.
Ingredients:
  • 400g sweet potato, peeled, cut into fries
  • 4.60 gm rice bran oil
  • 165.00 ml panko breadcrumbs
  • 1 tsp lemon rind
  • 360g white fish fillets, cut into portions
  • 125.00 ml Dairy Greek Style Yoghurt
  • 40.00 ml finely chopped gherkins
  • 1/2 eschalot, finely chopped
  • 30.00 ml finely chopped chives
  • 2 tsp finely chopped dill
Instructions:
  • Preheat the Philips Airfryer to 180°C.
  • Coat sweet potatoes with oil in a medium bowl, then transfer to the basket. Place the separating grill on top of the sweet potatoes.
  • Mix together breadcrumbs and lemon zest on a shallow plate. Season with salt and pepper. Whisk egg in another shallow plate. Coat fish in egg, then press into breadcrumb mixture. Lightly spray with oil and place on air fryer basket. Air fry for 12 minutes, or until fries and fish are golden and crispy.
  • In a medium bowl, mix together yogurt, gherkins, shallot, chives, and dill. Season with salt and pepper. Serve the fish with sweet potato fries and your own tartare sauce.
