Fish Baked in Lettuce Pockets

Succulent seafood masterpiece with a light touch.
Ingredients:
  • 6 large lettuce leaves or 12 small lettuce leaves
  • 1 medium carrot, shredded
  • 1 small zucchini, shredded
  • 1 1/2 pounds fresh or frozen (thawed) fish fillets, cut into 6 serving pieces
  • 1 teaspoon dried marjoram leaves
  • Salt and pepper to taste
  • 2 tablespoons butter or margarine
Instructions:
  • Preheat oven to 400°F. Submerge several lettuce leaves in hot water, allowing them to wilt for 1-2 minutes. Drain excess water.
  • On each lettuce leaf, beautifully arrange a mixture of carrot and zucchini near the stem end. Top with a piece of fish, season with marjoram, salt, and pepper, and finish with a touch of butter.
  • Wrap the fish in a lettuce leaf and lay it seam side down in a 13x9x2 inch baking dish, ensuring the vegetables are on top. Bake covered for 25-30 minutes until the fish flakes easily with a fork.
