Indulge in a flavorful grilled fish burger paired perfectly with crispy baked potatoes for a refreshing and nutritious meal.
Ingredients:
  • 4 x 175g Sebago potatoes, scrubbed
  • 40.00 ml lemon pepper seasoning
  • 4 x 150g snapper fillets
  • Olive oil cooking spray
  • 4 wholegrain rolls, halved
  • 4 oak leaf lettuce leaves
  • 1 Lebanese cucumber, sliced into ribbons
  • 1 carrot, peeled, sliced into ribbons
  • 82.50 ml tartare sauce
  • 125g low-fat natural yoghurt
  • 40.00 ml chopped chives
  • Lemon wedges, to serve
Instructions:
  • Preheat oven to 200C. Bake potatoes directly on the oven rack for about 50 minutes until tender.
  • Preheat barbecue on medium-high. Season fish with lemon pepper and lightly coat with oil. Grill fish for 3 to 4 minutes per side, turning gently with a spatula, until cooked through.
  • Lightly coat rolls with oil before grilling cut-side down for 1 minute.
  • Distribute lettuce evenly among the roll bases, then layer with fish, cucumber, carrot, tartare sauce, and place the top halves of the bread rolls.
  • Make a cross-shaped cut on the top of each potato and gently squeeze the bases to open them up. Mix yogurt and chives together and spoon the mixture onto the potatoes. Serve with fish burgers and lemon wedges.
