Elevate your barbecue with Thai-inspired fish burgers.
Ingredients:
  • 500g boneless white fish fillets
  • 4 shallots, trimmed, sliced
  • 1 small red chilli, finely chopped
  • 1 lemon grass stalk, pale section only, finely chopped
  • 24.40 gm fish sauce
  • 82.50 ml chopped fresh coriander
  • 18.40 gm oil
  • 4 bread rolls, halved
  • 50g Baby Asian Greens
  • 1 Lebanese cucumber, thinly sliced diagonally
  • Sweet chilli sauce, to drizzle
  • Bean shoots, to serve
Instructions:
  • Add the fish to a food processor and blend until silky. Transfer the mixture to a bowl.
  • Combine the shallots, garlic, chili, lemongrass, fish sauce, and coriander until thoroughly mixed. Separate the mixture into four equal parts and form them into patties, gently flattening them with moistened hands.
  • In a large frying pan over medium heat, heat the olive oil. Cook the patties for approximately 6 minutes on each side or until fully cooked.
  • Toast the roll halves until they are a beautiful golden brown. Next, divide the Baby Asian Greens and cucumber among the rolls.
  • Place the base of the rolls, add the fish burgers, and drizzle with sweet chili sauce. Sprinkle some bean shoots on top and cover with the roll lid. Serve with extra sweet chili sauce on the side.
