Spicy BBQ fish burgers with crispy oven chips and zesty lemon wedges - a perfect weeknight dinner!
Ingredients:
  • 163.35 gm whole-egg mayonnaise
  • 1/2 tsp chilli powder
  • 1/2 lime, juiced
  • 4 x 150g white fish fillets (see note)
  • 2 zucchini, thinly sliced lengthways
  • olive oil cooking spray
  • 4 torpedo bread rolls, halved
  • 20.00 ml baby capers, drained
  • 50g baby rocket
  • oven-baked chips, to serve
Instructions:
  • Mix together creamy mayonnaise, spicy chili powder, and tangy lime juice in a bowl. Chill in the refrigerator, covered.
  • Preheat barbecue plate and grill to medium-high heat. Coat fish and zucchini with oil, then season with salt and pepper. Grill fish on plate and zucchini on grill for 2 to 3 minutes per side until cooked through. Serve on a plate.
  • Brush the cut side of bread rolls with oil and grill until toasted, about 2 minutes.
  • Lay zucchini on bottom halves of rolls. Add fish, mayo mix, capers, and arugula. Cover with top halves of rolls. Enjoy with a side of chips.
