Fish burgers with lemon mayonnaise

Enjoy chargrilled fish burgers topped with fresh salad and zesty lemon mayo for a quick and satisfying dinner.
Ingredients:
  • 80mls (1/3 cup) whole egg mayonnaise (S & W brand)
  • 1 lemon, rind finely grated, juiced
  • 2 tsp finely chopped fresh Continental parsley
  • Salt & ground black pepper, to taste
  • 4 bread rolls, halved
  • 40.00 ml vegetable or canola oil
  • 500g redfish or flake/boneless fish fillets, trimmed
  • 8 butter lettuce leaves, washed, trimmed
  • 2 medium ripe tomatoes, sliced
  • Extra fresh Continental parsley sprigs, to garnish
Instructions:
  • Heat up a chargrill or frying pan over medium-high heat until it's nice and hot.
  • Mix together mayonnaise, lemon zest, 1 teaspoon lemon juice, fresh parsley, and season with salt and pepper to your liking in a bowl.
  • Brush the bread rolls with 1 1/2 tablespoons of oil on both sides. Grill or fry for 2-3 minutes per side until golden. Set aside.
  • Season the fish fillets with salt and pepper. Cook them in a chargrill or frying pan with oil for 2-3 minutes per side until flaky. Drizzle with 1 tablespoon lemon juice. Assemble sandwiches with lettuce, tomato, fish, and mayo. Garnish with parsley before serving.
