Delicious fish burgers paired with crispy oven-baked chips and zesty lemon wedges create a perfect midweek dinner.
Ingredients:
  • 125.00 ml plain flour
  • 2 eggs
  • 625.00 ml fresh white breadcrumbs
  • 20.00 ml lemon pepper (see note)
  • 700g whiting fillets (see note), bones and skin removed
  • 36.40 gm olive oil
  • 40g butter, chopped
  • 4 hot dog buns, split, toasted
  • 80g baby rocket
  • 125.00 ml tartare sauce
  • Oven-baked chips, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat the oven to 150C. Spread flour on a plate, beat eggs in a shallow bowl, and mix breadcrumbs with lemon pepper on another plate.
  • Pat each fillet of fish in a light coating of flour, then dip into the beaten egg, followed by the breadcrumb mixture. Gently press the crumbs onto the fish with your fingertips and place them on a large plate.
  • In a large non-stick frying pan over medium heat, warm oil and butter. Sear fish in batches for 2 minutes on each side until fully cooked. Place on a baking tray to keep warm.
  • Assemble hot dog buns with rocket, fish fillets, tartare sauce, and bun tops. Accompany with chips and lemon wedges.
