Fish Fillets with Roasted Red Pepper Mayonnaise

Elevate tilapia with a flavorful roasted bell pepper mayo dressing spiked with cumin and garlic.
Ingredients:
  • 1 tablespoon butter
  • 1 1/2 to 2 lb. tilapia fillets
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1/2 cup light mayonnaise
  • 1/4 cup chopped roasted red bell peppers (from a jar)
  • 1/4 teaspoon cumin
  • 1 garlic clove, minced
Instructions:
  • Preheat oven to 400°F. Lightly grease a shallow baking pan with some of the butter. Place tilapia fillets in the pan. Brush fish with the rest of the butter, then sprinkle with salt, pepper, and paprika.
  • Roast at 400°F until fish easily flakes with a fork, about 15-20 minutes.
  • In a small bowl, mix all the remaining ingredients until well blended. Serve the fish with the mayonnaise mixture.
