Ingredients:
  • 375.00 ml fresh breadcrumbs
  • 1 tsp peppered season-all
  • 3 tsp finely grated lemon rind
  • 40.00 ml finely chopped fresh parsley
  • 82.50 ml plain flour
  • 700g firm white fish fillets, cut into 3cm wide slices (see note)
  • Olive oil cooking spray
  • Tartare sauce, to serve
  • 450g orange sweet potato, peeled, halved, sliced
  • 2 medium zucchini, peeled, halved, thickly sliced
  • 3 small carrots, peeled, halved, thickly sliced
  • 11.80 gm wholegrain mustard
  • 27.00 gm maple syrup
  • 9.20 gm olive oil
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and lightly grease 2 large baking trays.
  • Prepare a medley of vegetables by placing sweet potato, zucchini, and carrot in a large resealable bag. In a jug, combine mustard, garlic, maple syrup, and oil, then pour over the vegetables. Seal the bag and shake well to evenly coat the vegetables. Spread the mixture on a baking tray and bake for 25 minutes.
  • In a bowl, mix breadcrumbs, season-all, lemon rind, and parsley. Put flour in a dish. Whisk eggs in another bowl. Coat each piece of fish in flour, then egg, then breadcrumb mixture. Arrange on the prepared tray. Repeat with the rest of the fish. Give a light spray of oil.
  • Roast fish and vegetables for 15-20 minutes, or until the fish is golden and cooked through, and the vegetables are tender. Serve with tartare sauce and lemon wedges.
